The sauce can be made in advance and most of the other ingredients can be prepped ahead too.<br \/>\nSauce<\/p>\n<ul>\n<li>1\/4 cup ground dried shrimp \u0e01\u0e38\u0e49\u0e07\u0e41\u0e2b\u0e49\u0e07<\/li>\n<li>1\/2 -1 cup sugar \u0e19\u0e49\u0e33\u0e15\u0e32\u0e25<\/li>\n<li>1\/4 cup roasted grated coconut meat (can be roasted in a dry cast iron skillet on a burner)\u0e21\u0e30\u0e1e\u0e23\u0e49\u0e32\u0e27\u0e40\u0e1c\u0e32<\/li>\n<li>2 T fish sauce \u0e19\u0e49\u0e33\u0e1b\u0e25\u0e32<\/li>\n<li>1\/2 cup water \u0e19\u0e49\u0e33<\/li>\n<li>1 teaspoon shrimp paste \u0e01\u0e30\u0e1b\u0e34<\/li>\n<\/ul>\n<p>Roast coconut meat, add sugar until dissolved add fish sauce and shrimp paste and water cook 1 or 2 min., cool.<\/p>\n<ul>\n<li>1 cup shredded coconut ( roast to bring out flavor)\u00a0\u0e21\u0e30\u0e1e\u0e23\u0e49\u0e32\u0e27<\/li>\n<li>1\/4 cup shallot diced\u00a0\u0e2b\u0e2d\u0e21<\/li>\n<li>1\/4 cup small diced ginger\u00a0\u0e02\u0e34\u0e07<\/li>\n<li>1\/4\/cup peanuts roasted no salt\u00a0\u0e16\u0e31\u0e48\u0e27\u0e25\u0e34\u0e2a\u0e07<\/li>\n<li>1\/4 cup dried shrimp (not fresh) from asian gorcery\u00a0\u0e01\u0e38\u0e49\u0e07\u0e41\u0e2b\u0e49\u0e07<\/li>\n<li>1\/4 cup small bits of lime with peel (1\/4&#8243;x 1\/4&#8243;x 1\/4&#8243;)\u00a0\u0e21\u0e30\u0e19\u0e32\u0e27<\/li>\n<li>1\/4 cup small serrano chillies , seeded for the mild stomachs\u00a0\u0e1e\u0e23\u0e34\u0e01<\/li>\n<li>Lettuce leaves\u00a0\u0e43\u0e1a??\u00a0\u0e2b\u0e23\u0e37\u0e2d\u00a0\u0e43\u0e1a\u0e1c\u0e31\u0e01\u0e01\u0e32\u0e14<\/li>\n<\/ul>\n<p>Take the lettuce leaves and wilt them\u00a0 by soaking in a strong warm brine.
